A former French whaling town folded into a flooded volcanic crater. Timber cottages painted peppermint and butter-yellow line the waterfront, and Hector's dolphins roll past the jetty. The road in climbs so high you'll look down on the crater rim like a green bowl spilling water.
The TranzAlpine train drops you in beech forest that smells like cold honey, then kea alpine parrots skid across the café roof looking for sandwich crusts. Avalanche waterfalls hiss beside the short Dobson Nature Walk, while longer tramps climb to views of the Waimakariri's shingle-braided river.
Morning soak in silky, mineral-hot pools ringed by Douglas-fir, then an afternoon tasting peppery Waipara pinot noir while crickets bake in the vines. The drive threads through the Waipara Gorge where you'll smell wild thyme draughting through the window vents.
A salty loop north: green-lipped mussel farms at Waikuku, crayfish boil-ups at the Nins Bin caravan, then a boardwalk chorus of barking fur seals at Ohau Point. In winter you'll likely see fluffy black pups learning to swim in the rock-pools below.
Long but doable: set off early to arrive before coach crowds, then walk the Hooker Valley track where suspension bridges thrum under your boots and icebergs glide across the milky lake. On the return, stop at Lake Tekapo for a dusk photo when the lupins glow violet under the church.
A 15-minute drive through the neon-lit tunnel pops you into a port town smelling of diesel, coffee, and seaweed. Catch the black-and-yellow ferry to Diamond Harbour for cliff-top views back to the crater rim, Christchurch's skyline looks toy-sized across the water.
Jet-boats spin 360° on a braided grey-blue river hemmed by willow and shingle cliffs. Water spray tastes glacier-sweet. Afterwards wander the Oxford forest where bell-birds echo like dropped marbles.

Shorter excursions when time is limited.
Crescent of honey sand 20 minutes from town. Grab a scoop of hokey-pokey ice-cream, then sweat up the WWII gun emplacements where you hear cannon slots echo and smell coastal sage.
Gondola glides above gorse to a 500 m ridge. From the summit platform you'll see the patchwork city one side, Lyttelton volcano the other, with wind humming through the red tussock.
Pocket of 600-year-old kahikitea that smells damp and nutmeg-like; wooden boardwalk keeps your shoes dry while you look up at trunks like grey pillars. Dean's Cottage next door is Christchurch's oldest lived-in house.
Evening half-day when kiwi calls start. Dusk torch-lighting lets you watch the national bird shuffle past your shoes while eels slap the pond surface hoping for koi pellets.

- ✓ Book TranzAlpine seats at least two weeks ahead for same-day returns, Tuesday and Wednesday sell out fastest.
- ✓ Carry a reusable water bottle. Most town centres have public taps fed by Canterbury aquifers that taste faintly of stone.
- ✓ Bring coins for seal-colony car parks, machines don't take pay-wave and rangers issue instant fines.
- ✓ Jet-boats and dolphin cruises run rain-or-shine; only high-wind cancellations get refunds, not drizzle.
- ✓ If you're doing Aoraki in a day, swap drivers at Lake Tekapo café, espresso's strong and seats have USB chargers.
